I got this recipe from an old Junior League Cookbook. I was skeptical because of the mixes, but trust me, it is so delicious. The fresh strawberries make up for the boxes, right?
Fresh Strawberry Cake
1 white cake mix
1 4 oz strawberry jello mix
4 eggs, lightly beaten
1 cup oil
1/4 cup water
1 cup fresh strawberries (chopped small or run through food processor)
Preheat 350. Grease cake pans. Combine mixes with oil, water, eggs and 1 cup of the strawberries. Pour evenly into cake pans. Bake 20-25 minutes until middle set.
Frosting
1 cup butter softened
24 oz powdered sugar
1/2 cup fresh strawberries (chopped small or run through food processor)
Combine and beat until smooth and fluffy. If it’s not thick enough add more powdered sugar. Layer and frost. Refrigerate.
