Yummy Mulligatawny!

This soup was such a pleasant surprise.  It was very easy to put together and had a great rich flavor.  I used the recipe from Pioneer Woman and added potatoes, diced small and par-boiled in extra chicken broth.  The surprising ingredient was the apple, which no one could recognize until I told them it was in there.  The chicken, onion, apple, and potato together made a great texture, with plenty of substance to make it a hearty almost stew.  Together with the crusty french bread it was amazing.  I will be adding this to the permanent soup rotation.

Oh, and this is the soup from the “Soup Nazi” Seinfeld episode.  They always made it look so good, nice to know you can make it relatively easy and not have to stand in line.

Also, you could easily make this vegetarian by skipping the chicken and adding carrots or rice or any of the suggestions Pioneer Woman makes.  You can’t go wrong, it’s delicious!
