Pumpkin Bisque

So, yeah, Pumpkin Bisque. I’m not really sure where this recipe came from, one of the girls at work gave it to me to try, so I gave it a shot. My mom liked it and my 13 year old son actually loved it, which was rather surprising given the fact that his dinner of choice would include a Big Mac. The jury is still out for me, possibly because of the bag of extra spicy doritos I had just polished off before I tasted it, or maybe I’m just not sure about pumpkin if it’s not in pie. Anyway, the recipe was simple and it sure did make a pretty picture.
Saute 1 onion chopped in a couple tablespoons of butter. Saute until onion is very soft, about 10 minutes. Then add 1 15 oz. can pumpkin (NOT pie filling), 2 cups chicken broth, 1 tsp each salt, pepper and thyme, 2 bay leaves and 1 cup half & half. Simmer on low for 30 minutes.
