Wings, Baby!
THE ultimate football food! Well, at our house they are the official birthday food, party food, appetizer food, dinner food, Monday food, Tuesday, Friday …you get the picture. We love wings. I have finally mastered making them myself, after spending way too much money on take-out wings. We have many boys in the house who actually consider eating them, as hot as they can stand them, a sport.
So anyway, here’s how I do wings. First I buy them fresh from Whole Foods. Hands down, the freshest and most meaty wings I have been able to find.
Marinate them with your choice of hot sauce, I use a combination of Sriracha, Texas Pete, and Melinda’s, along with a half stick of melted butter. Obviously, the longer you marinate them the better but today I only had about an hour and a half.
Then, spread them in a single layer on a baking sheet and cook them at 400 degrees for at least an hour and a half to 2 hours. If your oven runs hot, you may need to turn it back to 350 about a half an hour in. Tonight I had a little trouble getting them to crisp up so I switched after 90 minutes to Convection Bake at 375. I let them go for about another hour, turning them over half way through. Per.fec.tion. When they are done cooking I toss them around in a (new) melted butter/hot sauce mixture like I used to marinate them.
These were so much better than any we’ve bought out, perfectly cooked, meat fell off the bone in one yummy bite. All boys agreed. So yeah, you might want to move in next door and be my new bestie :)
