Southwestern Chili

This chili is perfect football food!  I like to keep it nice and thick so you can top it with cheese and sour cream and serve with tortilla chips.  Of course you can just eat it with a spoon, it’s a great chili recipe that you can add in or keep out whatever you prefer.

I start with 2 pounds browned ground beef, one big sweet onion chopped, one green pepper chopped and 2 chopped jalapenos. 

From there, the can opener does all the work.  My neighbor gave me one of those “as seen on tv” One Touch can openers that I love and would highly recommend.

I add:

4 cans (various) diced tomatoes (fire roasted are really good here)

2 cans hominy 

2 cans black beans

1-2 cans diced green chiles

1 jar salsa (your preference-I used Medium)

1-2 tsp each cumin, black pepper

1 tablespoon chili powder

Bring it all to a boil and then turn it back to simmer.  Within 45 minutes it’s great, but after it sits a while it just gets better and better.

And obviously, don’t forget to top with shredded cheese and sour cream.  

Now you’re ready to GO OUT THERE AND HIT SOMEONE!  Or at least watch it on TV :)
